Preparation. Step 1. Place cream in a large bowl and beat with an electric mixer until firm peaks form. Step 2. To make the Chocolate Ripple Cake, spread approximately 2 teaspoons of cream on a biscuit, then sandwich with another biscuit. Repeat this process, then place your biscuits on their side in a round 22cm base springform tin.

Step 1. In a large bowl, using an electric mixer, beat cream until firm peaks form. Step 2. Line a tray with baking paper. Place 6 biscuits on prepared tray. Top each with 1 tblsp cream and layer with another biscuit. Continue stacking biscuits, 2 more times, finishing with a biscuit (4 biscuits in each stack). Step 3.

Repeat until all the biscuits have been used to form a long log. Step 4. Spread the completed log with enough cream to cover. You will use around 2/3 of the cream. .Ripple Cakes. • Make It Perfect

Step 1. Place honey and water in a small bowl. Stir to combine. Line a tray with baking paper. This tray will be used to hold the biscuits. Step 2. Brush a choc ripple biscuit with the honey mixture. Top the biscuit with 1 ½ tsp of double cream. Brush another biscuit with the honey mixture and place this on top of the cream.

Step 1: Make whipped cream. Using a stand mixer, hand mixer or a whisk and a strong arm, beat the heavy whipping cream with powdered sugar and vanilla until soft peaks form. Be careful not to overwhip, take them just a step further until a firm peak forms. You want them to be just sturdy enough to fill the cake, but not overwhipped and grainy.

250 g Arnott's Choc Ripple biscuits. Repeat 3 more times (see my notes), finishing with a layer of cream. Place in the fridge to set for a minimum of 6 hours or preferably overnight. Leave in the fridge until ready to serve. To serve, release the springform tin and lift it off, then peel off the baking paper.
