Brisket Tacos

Birria tacos are some of the best tacos out there. While birria is traditionally made from goat or lamb, today, they’re filled with brisket. We’re using leftover brisket that was slow-cooked in our smoker (find the recipe here). The taco is then dipped into a stew and fried for crunchy, savory goodness. There’s some good protein in this recipe and its one of our favorite ways to use leftover brisket.


  • 2 ½ cups leftover shredded brisket meat
  • 8 small tortillas (corn is best)
  • Choice of cooking oil
  • 2 ½ cups shredded cheese of choice
  • ½ cup chopped cilantro
  • Optional additional hot sauce

How To Cook

  1. Take out some of the broth liquid from the brisket meat, placing it in a bowl. If you didn’t save any, beef broth works for this step as well.
  2. Put all ingredients on a tray and put it in a practical position for grilling.
  3. Turn on the Blackstone to medium heat. Cook tortillas if they are uncooked.
  4. Dip both sides of each tortilla into the drained broth. Spread your cooking oil on the griddle.
  5. Cook each side of the dipped tortillas for about 30 seconds.
  6. Place a layer of cheese, brisket, toppings, and additional cheese inside the tortilla. Fold it over into the taco shape and press down.
  7. Cook 1-2 minutes per side until the cheese is melted and the shell is crispier.
  8. Remove and serve with additional broth or hot sauce of choice.

Philly Cheesesteak

Philly cheesesteak is a classic for east-coasters, and it’s super simple to make on a Blackstone Griddle. The hoagie, packed with thinly-sliced meat, cheese, and grilled onions, is an awesome crowd-feeding lunch or dinner option.


  • 1 ½ pounds of thinly sliced steak
  • 1 white onion, sliced
  • 1 green pepper, sliced
  • ½ teaspoon garlic powder
  • ½ teaspoon salt
  • ½ teaspoon pepper
  • 8 slices provolone cheese or cheese of your cheese
  • 4 hoagie rolls
  • 1 tablespoon avocado oil
  • 1 tablespoon butter
  • 2 tablespoons mayonnaise

How To Cook

  1. Preheat the Blackstone Griddle to medium heat.
  2. Add the oil and butter to the grill, spreading it around evenly until melted.
  3. Place the sliced onions and peppers on the grill, tossing them around until they are completely coated. Saute the onions until they are cooked to your liking.
  4. Shift the onions and peppers to an unheated grill section.
  5. Put the hoagies face down on a cooler section, allowing them to cook slowly.
  6. Add the steak to the hottest portion of the grill. Spread it out until it’s as thin as possible. Season the meat with salt, pepper, and garlic powder. Let it cook until the juices start to flow, then flip.
  7. Divide the steak into four sections.
  8. Add the onions, peppers, and cheese to each pile. Let the cheese melt.
  9. Lift the hoagies and spread mayonnaise on the cooked surface.
  10. Add the mixture to each bun.
  11. Serve the hoagies as soon as possible for the tastiest results.

  • 3 cups dehydrated hash browns

  • ¼ finely-diced onions

  • ½ pound sliced breakfast sausage links
  • 6 whisked eggs
  • ¼ cup whole milk
  • ¼ cup oil
  • Salt, pepper, and garlic to taste
  • 2 cups shredded cheddar cheese or cheese of choice

How To Cook

  1. Put the hash browns and water in a bowl, allowing them to soak. Let the combination sit for about 15 minutes. Then, drain the water.
  2. As the hash browns soak, heat the griddle to medium. Cook the onions in a tablespoon of butter.
  3. Add the hashbrowns and about a tablespoon of butter.
  4. Add more butter while the hashbrowns cook. Cook the sausages and eggs together.
  5. Wait until the bottom of the hashbrowns are browned, then flip.
  6. Once the other side of the hashbrowns cook a little, add the eggs, sausage, and cheese on top. Cover with additional hashbrowns.
  7. Add cheese, then wait until it is melted.
  8. Serve while warm.

  • 4 steaks of choice
  • 2 tablespoons of Montreal Steak Seasoning
  • 2 tablespoons of oil
  • 2 tablespoons of butter

  1. Heat the Blackstone Grill to a high temperature. It should be hot for a proper sear.
  2. Check to ensure the steaks are at room temperature and dry. Season the steaks, using about ½ tablespoon of seasoning per side.

  • 1 tablespoon plain greek yogurt or sour cream
  • ¼ cup water

How To Cook

  1. Grab a large bowl. Combine the flour, sugar, baking powder, baking soda, and salt.
  2. Mix the wet ingredients together in a separate bowl – buttermilk, egg, egg white, and greek yogurt. Then, add it to the dry ingredients. Stir until just wet and add water to achieve a better consistency.
