Place the roasted peppers and tomatillos in a food processor to chop up. Chop the onion and combine all of the ingredients in a large pot, bringing the mixture to a boil over medium-high heat. Water should cover the top of the jars by an inch. The water will cool somewhat in reaction to the addition of the jars. Return the water to a low boil and set the timer. Add back in about 1/4 cup of the tomato sauce from the can of whole tomatoes. Sprinkle with about 1/4 teaspoon of dried oregano. Mix in and taste. Adjust if needed. Add cilantro, and salt and pepper to taste.
