Add the kimchi to your mason jars packing it in tightly. Make sure to leave at least 2 inches of headroom (the kimchi will expand as it ferments). Close the lids to your jars. This recipe usually makes about 8-10 pint size jars. Close the lids on your jars and let them sit for 3-5 days. You must "burp" the jars once a day during these 3-5 days.

Make the kimchi paste: Combine the glutinous rice flour and 1 cup of the vegetable stock in a small saucepan and place over medium high heat. Stir until the mixture begins to bubble, 2 to 3 minutes. Add 1 tablespoon of the sugar and stir until the mixture is slightly translucent, 2 to 3 minutes.

Step 2: Brine the cabbage. Rinse the cabbage well, then cut it into quarters, lengthwise. Place in a large bowl and sprinkle completely with salt, working the salt in between each cabbage leaf. Even mold can start growing there. I recommend the round 2-liter (67.75 oz) jars. This is a little over half a gallon, so it is a very decent size that can be used for kimchi. If you are looking for a larger jar, then I would go with the 5-liter (169 oz) ones. Those are a little over 1.3 gallons.

In a large bowl, put in a small layer of cabbage chunks and sprinkle about 2-3 tablespoons of coarse sea salt over the cabbage. Repeat the process several times, creating layers of cabbage chunks and salt. Let the cabbage soak for 2 hours, turning them upside down a couple of times during the soaking.
