You may also see it called "Mock Pineapple" or "Faux Pineapple." Some of the earliest versions didn't include the water-bath processing, but disregard those and use a current version which gives tested processing times. Proponents of the recipe touted cost savings versus the real thing, but we're not sure if that is necessarily true anymore.


MOCK PINEAPPLE

Zucchini pineapple is also called Mock Pineapple and Faux Pineapple. The texture is a little different from real pineapple, but you can use pineapple zucchini in place of pineapple in salads, and recipes like Hawaiian haystacks and pineapple upside-down cake! (Or eat it plain like my 3-year-old!) This recipe yields 8-pint jars or 16 half-pint jars.

Prepare enough to measure 4 quarts. In a large pot mix zucchini, pineapple juice, lemon juice, and sugar and bring to a boil.
