No Pain Lo Mein May 6, 2012 ~ Kim Olgren I have faithfully (or perhaps brazenly) reproduced Rachel Ray's yummy version of this recipe here (don't send me hate messages that she's not a "real chef", because I don't care). It's one of my favorite recipes because it's so versatile.


No Pain Lo Mein Recipe Shrimp with Noodles and Vegetables

For cooked lo mein noodles: Simply allow them to come up to room temperature before stir-frying. Alternatively, you can put the noodles in a colander and rinse them under hot tap water to warm and loosen them up. Drain thoroughly, and coat once again in a couple teaspoons oil before stir-frying.

Toss to coat. Heat oil in a wok or large heavy based skillet over high heat until smoking. Add onion and garlic, stir 30 seconds. Add chicken, stir until white on the outside, still raw inside - 1 minute. Add carrot and capsicum/bell peppers, cook 2 minutes or until chicken is cooked. Add noodles, Sauce and water.

1. Cook noodles to package instructions. Drain; rinse and toss with 1 TBSP oil to prevent sticking. Set aside. 2. Heat a large skillet or wok over high heat. Add 1 TBSP of oil and veggies. Stir until vegetables are nicely seared (about 3 minutes.) Add in the noodles and pour in the sauce.
