Schmaltz, or rendered chicken fat, is used in many traditional Jewish dishes. It's added to latkes, stirred into chopped liver, and is a key by-product of making gribenes —salty, addictively.

Schmaltz and gribenes are two creative ways of using parts of the chicken that might otherwise be thrown away. Schmaltz is collected by slowly sautéing chicken skin and fat, then collecting the liquid fat that melts as it cooks.
