The art of eating fish sperm in Japan

Shirako, called milt in English, are the seminal vessels typically harvested from cod, and sometimes from anglerfish, salmon, squid and pufferfish. The harvested sperm sacs are tube-like in shape, usually white or light pink in color, with the layout and consistency of brains. Shirako translates into "white children" in Japanese.

Milt as food. Milt (sometimes spelled melt [1] [2]) or soft roe also refers to the male genitalia of fish when they contain sperm, used as food. Many cultures eat milt, often fried, though not usually as a dish by itself. In Indonesian cuisine, the milt (called telur ikan; fish egg) of snakehead and snapper is usually made into kari or woku .

Shirako is often augmented with ponzu sauce and other condiments to help give it the boost it needs to really stand out. One thing to note: shirako does change in texture a little bit as it cooks. You definitely don't want to have overcooked shirako. Too long on the grill and the semen gets hard and grainy and pretty unpleasant to eat.

Shirako ponzu "I was surprised by both its look and its taste. Honestly, I didn't think it tasted very good.. While shirako is a special delicacy of a treat for people in Japan, to those less familiar with it, it can be a little discomforting. The indescribable texture of it as it melts in your mouth is exactly what makes it so delicious.

Cut shirako into bite-sized pieces. Add shirako pieces into the hot water, and boil for about 30 seconds. Use a slotted spoon to remove shirako from the water and place it into an iced water bath. Drain the water and add shirako into a mixing bowl. Add ponzu sauce, soy sauce, optional dashi sauce. Mix gently.
