Preheat the smoker to 200 degrees Fahrenheit. Carefully slice the tops of the garlic bulbs off, about a half of an inch deep. Place the garlic cut side up into the pan. Sprinkle some salt, pepper and BBQ Rub of choice. Drizzle with Olive Oil. Place the pan into the preheated smoker and smoke for one hour.

Drizzle or brush the top of the bulbs with olive oil. Place the baking sheets directly on the middle rack of your smoker. Smoke the garlic at 180f for 1 hour. Increase the temperature to 275f and smoke for 1 hour. Wrap the baking sheets in foil and smoke at 275f for a further 30 minutes.

Smoking the Garlic. When smoking garlic, it's important to use a low temperature to avoid burning the cloves. Aim for a temperature of 200°F to 225°F, and let the garlic smoke for about 60 to 90 minutes. You can use wood chips or chunks to create the smoke, such as hickory, apple, or mesquite, depending on your flavor preferences.

Wrapping the smoked garlic bulbs in foil and increasing the temperature will finish the roasting process. You're looking for soft, squeezable bulbs with golden caramelized cloves. The recipe calls for increasing the temperature on the Traeger to 300ºF, but a wide range of temperatures will get the job done. See the notes about roasting.

Place the halved garlic cloves on a piece of foil and drizzle with one tablespoon of olive oil. Sprinkle with salt and pepper. Add the garlic to the smoker.
