Prepare the grill for high heat grilling and place the plank on the grill, closing the lid for about two minutes. In the meantime, season the steak with salt, black pepper, white pepper and a dusting of granulated garlic. Open the lid on the grill, flip over the plank and place the steak on it.

Soak Red Oak Plank in hot water for at least 15 minutes. Preheat grill to 400°F. Put butter, chopped herbs and salt and pepper into blender and blend until smooth. Set aside. Spread roughly a teaspoon of the herb and butter mix on the top of each steak and then sprinkle steaks with salt & pepper and place on planks.

Fruity woods, like apple and cherry, work wonderfully with pork and chicken, while cedar and alder tend to be the perfect choices when grilling fish on a plank.
