Zucchini with Bacon Taste of the South

A traditional quiche recipe would require wheat flour, or all-purpose flour, pastry base. Some recipes even add flour or cornstarch to the eggs mixture to make it heavy and dense. Zucchini, cheese, and bacon quiche was a staple growing up in my family, but my new recipe is flourless and low carb. It is superb for dinners, lunches, and picnics.

Add all the other ingredients and mix. Place the hot pastry tart in the case on a baking tray and pour in the filling. Top with the bacon and zucchini arranging things evenly over the top. Return the quiche to the oven and bake for 30 - 35 minutes until it has set and browned around the edge. Servings: 1 quiche.

To make the filling: Wash and cut the onion, leeks, and zucchini into thin slices. Stir the onion and leeks at medium heat with the butter and 1 tablespoon of olive oil in a large frying pan. Once the onion becomes translucent, add the bacon and the zucchini, and stir fry until they begin to brown. Add salt.

Combine 1 cup reduced-fat milk and the next 5 ingredients (through eggs) in a large bowl, stirring with a whisk. Arrange squash mixture evenly over crust, and sprinkle with 3/4 cup mozzarella cheese. Pour the egg mixture over cheese. Bake at 350° for 45 minutes or until filling is set. Cool for 15 minutes on a wire rack.

Stir in bacon, zucchini, and cheese and pour into piecrust. Bake until filling is just set, 25 to 30 minutes. Transfer quiche in pan to rack to cool slightly, about 20 minutes.

Heat the oven to 350º F (or in my case, lower the oven from 400°F to 350°F). Mix the bacon and onion/zucchini mixture together and place in the bottom of the pie crust, top with the cheeses (also mixed together), and then slowly pour the egg/cream mixture over. Place in the oven on a cookie sheet and bake for 35 - 45 minutes, or until set.

Let sit 5-10 minutes. Place the shredded zucchini inside of a kitchen towel and squeeze the moisture out into the sink. Set aside. Heat a large skillet to medium. Combine the flour, baking powder, and salt in a small bowl. In a separate bowl, beat the eggs until nice and fluffy (2 to 3 minutes). Whisk in the Greek yogurt until combined and smooth. Add in the grated cheese, flour mixture, bacon, and zucchini mixture and stir until combined. Pour filling into hash brown crust and bake for 35 to 40 minutes.

Cut the bacon into small pieces and cook until it is cooked but not crisp. Drain the bacon on paper towles to remove excess fat. Divide into two equal parts. In another pan, melt the butter and add the onion. Saute till the onion is soft. Add the zucchini, flour and pepper and cook for another minute. Set aside.

Preheat oven to 375 F and grease a 9" pie pan. Sweat. Toss zucchini (4 cups), if you have extra, toss or save for another recipe) in a colander and sprinkle heavily with salt. Toss to coat. Allow zucchini to sweat for 15 minutes. Then give your slices a rinse and use paper towels to dab dry.

Preheat the oven to 350 degrees. Roll out pie crust and place it in a 9" round deep-dish pie pan. Flute or decorate the edges of the crust, if desired. Next, dock the dough by using a fork to poke holes in the bottom and sides of the pie crust. Then prepare to blind bake a pie crust for 15 minutes.

Preheat oven to 350°F/175°C. Prepare a 9-inch unbaked pie crust. Slice and shred zucchini, and set slices aside for topping. In a fry pan, cook bacon till crisp. Cool and crumble. Wash and thinly slice the tender white part of the leeks, after discarding the tough green tops. Drain bacon grease from pan.
